I’m obsessed with lavender, anything I see with lavender I just have to have! My dream is to visit the south of France at the time lavender is in bloom. I want to stroll through the purple fields of lavender flowers and experience the fragrance first hand. Hence it comes to no surprise that when I came across Lavender scones on Pinterest, it was a must for me to make! I ordered lavender ingredients from Amazon from Cotswold Lavender and before the weekend arrived, I was all set to make my homemade lavender scones.
We also made a trip to Lady Betty’s Afternoon Tea room in Harrogate over the weekend, and guess what was part of the scone selection? Lavender scones! Coincidence or what? I found this amazing recipe that seemed very promising and the pictures looked gorgeous. I got everything I needed from shops so I was ready to go! Well, apart from one little detail. I didn’t have a scale! I’m no baking guru but how could I miss this one. I decided not to give up and started searching for recipes using cups for measurement. I put together a few recipes based on the ingredients I had and with a tad of common sense I created my own lavender scones recipe.
Homemade Lavender Scones Recipe:
- 2 cups of self raising flower
- 4 tea spoons of baking powder
- 1 cup of buttermilk
- 2 eggs
- pinch of salt
- 100g unsalted batter
- 1 spoon of culinary lavender essence
- 1/2 cup of lavender sugar
- 4 tea spoons of culinary lavender
- Preheat the oven to 225 C/ 425 F /Gas 7.
- Break your eggs, separate yolks from whites…keep both!
- Cut your raisins into tiny pieces…or at least I did.
- Get your big bowl out and sieve the flour with baking powder. This will help to mix the baking powder with flower.
- Cut the butter into small pieces and rub it with your hands with the flower until it resembles breadcrumbs.
- Add buttermilk, pinch of salt, raisins, egg yolks, lavender essence, lavender sugar, culinary lavender and make a soft dough. Make sure you knead the dough properly.
- Roll out the dough on a flowered board. I rolled out mine until it was about 2 cm thick.
- Get your pastry cutter out (in my case I used a glass) and cut the scones out.
- Place them on a greased baking tray. I used a silver foil but I greased it with coconut oil (yum yum).
- Use the white from egg to brush the top of each scone and baked in the oven for about 20 – 25 minutes.
Tip: Use a wooden stick to stab the middle of your scones. If the dough
sticks to the stick, leave it in the oven for a bit longer.
My homemade lavender scones were a huge success. Everyone loved
them and due to their popularity I’m making them again this weekend!
