This weekend I finally managed to spend some time at home. After nearly three weeks of holiday, my sister’s wedding, car boot sales and other responsibilities, I must admit I thoroughly enjoy spending it at home. So much so, we invited my husband’s mum over for lunch to catch up on our holiday adventures. My husband decided to cook our favourite Croatian food, a seabass with spinach and it was up to me to sort the dessert – ginger sponge pudding with custard.

Now, I used to love baking but given my busy lifestyle, I’ve fallen out with baking. It’s too hard to omit sweets out of my life if I bake! I also don’t like to buy cakes as I appreciate thr freshness and taste of home baked goodies. For this reason I decided to treat them both to my baking skills.

This ginger sponge pudding recipe is basically the easiest and quickest way you can bake using microwave oven and still achieve fantastic results.

To make sure it goes to plan I searched for quick and easy recipes that even those least skilled bakers can manage to do. I also need to bake it in a short time because my husband needed the kitchen for himself (talk about high demands, right). I do happily stay away from the kitchen though,

This is when I came across this YouTube recipes for Ginger sponge pudding. This was super easy and super quick, even for someone who hasn’t baked for ages like me. What is more, this is a Michelin-Starred dessert! This moreish Ginger Sponge Pudding by celebrated chef Tom Kitchin is the perfect to round off any meal, or even just as a naughty treat!

I actually don’t use weighting scales as I find it too messy so I tend to use the “baking with cups method”. This ginger sponge pudding recipe is basically the easiest and quickest way you can bake and achieve fantastic results.

This Ginger sponge pudding recipe serves 5-6 portions

  • ¾ of self-raising flower
  • ½ tea spoon of baking powder
  • 1/2 cup of demerara sugar
  • 1 table spoon of black treacle syrup
  • 1 tea spoon of mixed spices
  • 1 table spoon of golden syrup
  • 1 tea spoon of cinnamon
  • 1/2 cup of milk
  • 1 egg

    Oh wow this looks awesome and I’ve never actually heard of a ginger sponge pudding before this! I wish I loved to bake as well, for some reason I just find it a bit stressful?

      You might find this one easy. Using a cup as a measurement instead of a scale is definitely helping me 🙂

    Oh my gosh!
